How It's Made
From Seed to Sip
Every stage is designed for patience and precision. The goal is always the same: to capture the authentic character of our botanicals and transform them into something distinctly Bahamian.
Raw Materials & Storage
Every bottle begins here. Fruits, bark, and botanicals arrive from Bahamian farmers and are inspected, catalogued, and stored in our temperature-controlled facility—below 70°F with humidity under 65%—to preserve their natural oils and aromas until they’re ready for use.
Cascarilla bark, featherbed, sweet Margaret, guava, sapodilla, soursop, and more—each carefully dried and catalogued before entering production.
Maceration & Extraction
The art of soaking. Raw botanicals rest in alcohol derived from sugarcane or wheat, allowing their natural flavors, colors, and essential oils to slowly infuse. Each batch is steeped for precisely the right duration—from two days to several weeks.
Cascarilla bark macerates to release its spicy, herbal notes without bitterness. Fruits like guava and sapodilla take longer to develop their natural sweetness and aroma.
Distillation
The heart of the operation. Macerated or fermented liquid is carefully heated so alcohol vapor rises, carrying essential oils and flavor compounds through our copper-and-steel distillation column. The copper smooths and balances flavors, removing impurities for a refined spirit.
Temperature, steam pressure, and cooling water flow are monitored with precision. Our smaller R&D still allows experimentation with new botanicals before scaling to full production.
Blending & Bottling
Where science meets artistry. Distilled spirits rest and condition before blending—each adjusted carefully, sometimes drop by drop. Purified rainwater collected from our roof brings each spirit to its final strength.
Measurements are done by weight rather than volume for absolute consistency. Our automated line rinses, fills, seals, and labels each bottle on-site—from liquid to label, entirely Bahamian.


Sustainability
Built to Sustain
Rainwater Recovery
Purified rainwater—collected directly from the roof of the distillery—is used throughout our process. From blending and proofing to cleaning, this same water ensures the entire operation is both sustainable and self-contained.
Our reverse osmosis system purifies the collected rainwater to the highest standards, making it an integral part of every spirit we produce.
Renewable Energy
The distillery is designed with energy efficiency at its core. From the equipment we select to the way we manage heating and cooling, every decision considers our environmental footprint on these islands we call home.
Innovation plays a key role—from small-batch stills that minimize waste to temperature-controlled storage that preserves botanicals naturally. It’s a balance of science and stewardship.

Innovation & R&D
Where Tradition Meets Technology
Quality Control Lab
Every spirit passes through our lab before bottling. We test each batch to confirm proof, clarity, and flavor consistency—ensuring every bottle tastes exactly as it should: pure, balanced, and true to the ingredient.
Small-Batch R&D Still
Our dedicated research still allows the team to experiment with new botanicals and blends on a smaller scale before moving to full production. This is where signature spirits like Cascarilla Amaro and Sapodilla Spirit were first created.
University Partnership
In collaboration with the University of The Bahamas, researchers study the medicinal and chemical properties of local plants. Their findings guide the development of new blends and support a growing knowledge base for Bahamian agriculture.
Our lab also evaluates essential oils extracted through steam distillation from plants like cascarilla, lemongrass, and sweet Margaret. These concentrated oils have applications beyond spirits—in cosmetics, natural wellness, and beyond. It’s where agriculture, science, and entrepreneurship converge.
Compliance is monitored alongside Bahamas Customs and independent labs ensuring all finished products meets requirements.


Aging & Finishing
Patience in Every Barrel
While most of our products are crafted to highlight freshness—capturing the true character of Bahamian fruits and botanicals—some blends spend time aging in oak casks. Even a few months in oak can soften the edges and bring depth, warmth, and a hint of natural sweetness.
As the spirit rests, it interacts with the wood and the air around it. That slow exchange develops new aromas and layers of flavor—the final step in balancing strength with smoothness.
Because we work with tropical fruits and botanicals unique to The Bahamas, this is a continuous learning process. Each season brings new discoveries about how our botanicals behave over time.
